Baked Ziti Florentine

  • 8 oz uncooked ziti pasta
  • 1 tsp olive oil
  • 1/2 small onion, chopped
  • 1 clove garlic, minced
  • 1/8 tsp salt
  • 1.5 cups low sodium marinara sauce
  • 5 oz package fresh baby spinach
  • 3/4 cup part-skim ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 cup shredded part-skim mozzarella cheese 
Preheat oven to 400 degrees. Cook ziti according to package. Heat oil in a Dutch oven over medium-high heat. Add onion; cook 3 minutes or until tender. Add garlic and salt; cook 1 minute. Stir in marinara sauce and spinach; cook 3 minutes. Remove from heat. Stir in cooked pasta, ricotta cheese, and Parmesan cheese. Spread pasta mixture in 8-inch baking dish coated with cooking spray. Sprinkle with mozzarella cheese. Bake 20-30 minutes or until bubbly and browned. Makes 4 servings.
