Chicken Verde

  • 1 tsp olive oil
  • 2 boneless, skinless chicken breasts
  • 1/3 cup salsa verde
  • 1/3 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh cilantro
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1.5 tsp fresh lime juice
Heat oil in large skillet over medium-high heat. Cook chicken 2 minutes per side, or until browned. Combine salsa, onion, garlic, cilantro, cumin, salt, and pepper in a 3-quart slow cooker. Nestle chicken into onion mixture. Cover and cook on Low 5 hours or until chicken is done. Stir in lime juice just before serving. Makes 2 servings. Shown here with Brown Cilantro-Lime Rice
