- 1 tsp olive oil
- 2 boneless, skinless chicken breasts
- 1/3 cup salsa verde
- 1/3 cup chopped yellow onion
- 2 cloves garlic, minced
- 1 tbsp chopped fresh cilantro
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 1.5 tsp fresh lime juice
Heat oil in large skillet over medium-high heat. Cook chicken 2 minutes per side, or until browned. Combine salsa, onion, garlic, cilantro, cumin, salt, and pepper in a 3-quart slow cooker. Nestle chicken into onion mixture. Cover and cook on Low 5 hours or until chicken is done. Stir in lime juice just before serving. Makes 2 servings. Shown here with Brown Cilantro-Lime Rice.
