Marinated Yellow Peppers with Fresh Mozzarella

  • 1.5 yellow bell peppers
  • 1.5 tbsp olive oil
  • 1 tsp grated lemon rind
  • 1 clove garlic, smashed
  • 2 oz. fresh mozzarella, cut into cubes
  • 1 sprig thyme
  • 1 tbsp torn fresh basil
Preheat broiler. Cut bell pepper into 6 even wedges. Toss peppers with 1.5 tsp oil. Broil 4 minutes per side, or until blistered. Toss together remaining ingredients with peppers and let sit 20 minutes. Discard garlic and thyme to serve. Makes 2 servings.
