Wild and Brown Rice Salad with Edamame

  • Package of microwavable brown and wild rice
  • 3/4 cup frozen shelled edamame
  • 3 Tbsp dried cranberries
  • 3 Tbsp chopped pecans (or walnuts), toasted
  • 1 green onion, chopped
  • 1 Tbsp fresh orange juice
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp olive oil
  • 1/2 tsp honey
  • 1/8 tsp salt
  • 1/8 tsp pepper
Cook rice and edamame according to package directions. Combine rice, edamame, cranberries, green onion and nuts in a serving bowl. Whisk together orange juice, apple cider vinegar, olive oil, honey, salt, and pepper. Pour over rice mixture; toss to coat. Makes 6 portions.
