Chicken Salad Melts

  • 1 cup shredded rotisserie chicken
  • 3 Tbsp finely chopped sweet onion
  • 3 Tbsp low fat mayo
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 plum tomato
  • 1/2 cup shredded sharp cheddar cheese
  • 2 slices Italian bread, toasted
Preheat broiler. Combine chicken, onion, mayo, salt and pepper; toss well to coat. Spoon chicken mixture evenly onto bread slices.; top with tomato. Sprinkle with cheese and broil 2 minutes or until cheese is lightly browned. Makes 2 servings.
