Grilled Sausage Stuffed Zucchini

  • 2 large zucchini, cut in half lengthwise, seeds removed
  • 1/4 lb ground turkey 
  • 2 plum tomatoes
  • 1 clove garlic, minced
  • 1/4 cup plus 2 Tbsp Parmesan cheese
Preheat grill to low heat. Combine sausage, tomatoes, garlic, and 2 Tbsp cheese in a medium bowl. Mix well. Fill zucchini halves with sausage mixture, pressing gently; top with remaining cheese. Grill, covered with grill lid, for 40 minutes or until sausage is no longer pink. Divide into 2 servings.
