Jalapeno-Cheddar Meat Loaves

  • 1 lb lean ground beef
  • 3 Tbsp panko bread crumbs
  • 1 egg white
  • 1 jalapeno pepper, minced
  • 1 clove garlic, minced
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp each salt and pepper
  • 8 oz. no-salt-added tomato sauce
  • 1.5 tsp Worcestershire sauce 
  • 1.5 tsp Dijon mustard
  • 1.5 tsp honey
  • 1/4 tsp chili powder
Preheat oven to 400. Coat 8 muffin cups in a muffin pan with cooking spray. Gently combine first 7 ingredients and press into the muffin cups. Whisk together remaining ingredients and pour over mini meat loaves. Bake 25 minutes; let cool 10 minutes. Makes 4 servings.
