Honey Garlic Shrimp Stir Fry

  • 1 lb shrimp, peeled and deveined
  • 1.5 Tbsp garlic
  • 2 tsp ginger 
  • 1 Tbsp + 2 tsp olive oil
  • 1/3 cup honey
  • 1/3 cup soy sauce
Place shrimp in a zip top bag. In a small
bowl, combine all other ingredients and stir until even. Pour about half of the mixture over the shrimp. Shake to coat shrimp and refrigerate 15 min. 

Heat 2 tsp oil in non-stick skillet over medium high heat. Place shrimp in hot oil. Cook until pink, pouring in remaining marinade half way through. Will take approximately 5-8 min to cook shrimp. Remove shrimp, spooning out sauce as well, and serve over rice and broccoli for a stir fry meal! Makes 2 servings.
