Sloppy Joe Lettuce Wraps

  • 1/2 lb ground round
  • 1/2 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 tsp canola oil
  • 1/3 cup no salt added tomato paste 
  • 1/3 cup 99%-fat-free beef broth
  • 1.5 tsp apple cider vinegar 
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 large Bibb or butter lettuce leaves
Cook beef in a nonstick skillet over medium heat 6-8 minutes; stir to crumble; drain. Cook onion and garlic in hot oil in skillet under onions are tender (approx. 5 minutes). Stir in tomato paste, broth, vinegar, chili powder, cumin, salt, and pepper. Return beef to skillet and cook 8 minutes or until sauce thickens. Spoon beef onto lettuce leaves and roll up. 2 wraps per serving; makes 2 servings.
