Green Onion-Feta Slaw

  • 1 (10 oz.) packaged shredded angel hair cabbage
  • 3 green onions
  • 1 (4 oz.) container crumbled feta cheese
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp Dijon mustard 
Combine cabbage, green onions, and feta in a serving bowl. Whisk together oil, lemon juice, and mustard. Poor dressing over slaw and toss to coat. Cover and chill approximately 30 minutes or until ready to serve. Makes 4 servings.
