- 1 lb matchstick carrots
- 1 Tbsp olive oil
- 1 tsp honey
- salt and pepper
Preheat oven to 425. Toss together carrots, oil, and honey. Sprinkle with salt and pepper. Place on a rimmed baking sheet, coated with cooking spray, in a single layer. Bake 18-20 minutes or until carrots are crisp tender. Makes 2 portions.
