Chicken Cordon Bleu

  • 2 (8 oz.) boneless, skinless chicken breasts, cut in half
  • 4 thin slices smoked ham (about 1 oz.) 
  • 4 slices Swiss cheese
  • Salt and Pepper
  • 1 tsp olive oil
Preheat oven to 350. Place chicken in a large zip-top bag; pound to 1/4-inch thickness. Top each piece of chicken with 1 slice ham and 1 slice cheese. Roll up and secure with wooden toothpicks. Sprinkle evenly with salt and pepper. Heat oil in an ovenproof skillet over medium heat; add chicken. Cook 3-4 minutes until browned on all sides, turning occasionally. Transfer skillet to oven and bake 16-18 minutes or until chicken in done. Divide into 2 servings.
