Honey-Lemon Chicken Thighs

  • 4 boneless, skinless chicken thighs
  • 1/4 tsp salt; 1/4 tsp pepper
  • 1.5 tsp olive oil
  • 1 tsp honey
  • 1/4 tsp grated lemon rind
  • 1 small clove garlic, minced
Preheat grill to medium-high heat. Sprinkle chicken thighs with salt and pepper. Grill thighs, covered with grill lid, 4 minutes per side. Meanwhile, combine honey, oil, lemon rind and garlic; brush over chicken. Grill chicken 1 minute longer per side or until done. Makes 2 servings.
