Chicken with Italian Tomato Salsa

  • 1 lb plum tomatoes, chopped
  • 2 Tbsp finely chopped yellow onion
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1/4 tsp pepper
  • 1 small clove garlic, minced
  • 1 (8 oz.) boneless, skinless chicken breast
  • 1/8 tsp salt
Preheat grill to medium-high heat. Combine tomatoes, onion, 1.5 Tbsp olive oil, vinegar, 1/8 tsp pepper, and garlic in medium bowl; chill. Brush chicken with remaining 1/2 tsp oil, and sprinkle with salt and remaining 1/8 tsp pepper. Grill chicken, covered with grill lid, 5 minutes per side or until done. Top with tomato mixture. Can make 2 servings by cutting the chicken in half.
