Balsamic Wilted Spinach

  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 5 oz. package baby spinach
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp pepper
Heat oil in non-stick skillet over medium-high heat. Saute garlic for 1 minute; add remaining ingredients and cook 3 minutes or until spinach is wilted and liquid is almost all evaporated. Makes 2 servings. Goes great with fish, like Tilapia on Orzo Bed, salmon fillets or tuna steaks.
