Deer Sausage and Penne Pasta

  • 4 oz whole wheat penne pasta
  • 2 tsp olive oil
  • 1 link fully cooked deer sausage, sliced
  • 1 red bell pepper, sliced 
  • 1/2 small onion, sliced
  • 1 clove garlic, minced
  • 14.5 oz can petite diced tomatoes
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/8 tsp crushed red pepper
Cook pasta according to package. Heat 1 tsp oil in non-stick skillet over medium-high heat. Add sausage and saute for 2 minutes or until browned. Remove sausage with tongs and set aside. Heat remaining 1 tsp oil. Add bell pepper, onion, and garlic. Saute 5 minutes. Stir in tomatoes and seasonings. Cook 5 minutes or until peppers are tender. Combine pasta, sausage, and tomato mixture. Makes 2 servings.
