- 2 lb boneless pork shoulder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tbsp olive oil
- 1 medium green bell pepper, sliced
- 1 tbsp fresh chopped parsley
- 1 tsp dried oregano
- 2 cloves garlic, minced
- 1 cup fat-free, reduced sodium chicken broth
- 1/4 cup apple cider vinegar
- 1/8 tsp crushed red pepper
Season pork with salt and pepper. Heat oil in a large skillet over high heat. Cook pork 5 minutes per side, or until browned. Place pork in a 4-quart slow cooker. Add remaining ingredients to slow cooker. Cover and cook on Low 6-7 hours, or until pork is very tender. Makes 6 servings.
