Roasted Carrots and Onions

  • 1/2 lb carrots, peeled and cut into 1/2 inch pieces
  • 1/2 medium onion, thinly sliced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp lemon-pepper seasoning
Preheat oven to 400. Combine all ingredients and spread in single layer on baking sheet. Bake 25-30 minutes or until tender and golden brown. Makes 2 servings.
