- 1 lb sweet potatoes
- 1/4 cup orange juice
- 1 Tbsp dark brown sugar
- 1/2 tsp butter, melted
- Pinch salt
- Pinch ground cinnamon
Preheat oven to 350. Place potatoes in a large pot; add water to cover. Bring to a boil. Reduce heat to medium-high; cook 25 to 30 minutes or until just tender. Peel potatoes, and cut in 1/2-inch thick slices. Arrange potatoes in a small baking dish coated with cooking spray. Stir together orange juice, brown sugar, butter, salt, and cinnamon; pour over potatoes. Cover dish with foil. Bake 20 minutes or until potatoes are tender. Makes 2 portions.
