- 1 lb ground sirloin
- 1/2 cup chopped sweet onion
- 1 can black beans, drained and rinsed
- 3 Tbsp diced jalapenos
- 3 tsp chili powder
- 1 tsp ground cumin
- 1/4 tsp salt
- 1 cup shredded reduced-fat Mexican-blend cheese
- 12 Tbsp fresh salsa
- 5 Tbsp chopped fresh cilantro
- Quick cooking brown rice

Cook ground sirloin and onion in medium skillet over medium heat 10 minutes or until browned, stirring to crumble; drain and return to skillet. Add beans, jalapenos chili powder, cumin, salt and 1/2 cup water; bring to boil. Reduce heat, and simmer 10 minutes. Divide into servings and top with cheese, salsa, and cilantro evenly. Serve over brown rice. Makes 6 servings.
