Green Onion Mashed Potatoes

  • 1/2 lb baking potato, cut into 2-inch pieces
  • 1/4 cup low-fat milk
  • 1.5 Tbsp butter
  • salt and pepper
  • 1 green onion, thinly sliced
Bring potatoes and water to cover to a boil in a saucepan; boil 12 minutes or until very tender. Drain. Add milk and butter; add salt and pepper to taste. Mask with fork or potato masher until smooth. Stir in green onion. Divide and serve. Makes 2 servings.
