- 3/4 lb turkey cutlets (or substitute chicken cutlets)
- salt and pepper
- 1 tsp olive oil
- 2 Tbsp jarred pesto
- 1/4 cup freshly grated Parmesan cheese

Sprinkle cutlets with salt and pepper. Cooke turkey in hot oil in a large non-stick skillet over medium-high heat 2-3 minutes per side, or until done. Divide into 2 portions and spread pesto over turkey. Sprinkle with Parmesan cheese.
Round out the meal with some veggies, such as Honey Roasted Carrots.
