Simple Grilled Veggies

  • 1 Tbsp extra virgin olive oil
  • 1 red onion, cut into 1-inch thick slices
  • 1 red bell pepper, cut into 4 pieces
  • 1 medium zucchini, cut lenghtwise into 1/2-inch thick slices 
  • 1/8 tsp garlic salt
  • pepper
Preheat grill to medium-high heat. Combine all ingredients, tossing veggies to coat. Grill veggies, covered with grill lid, in a single layer 3 minutes per side or until grill marks appear. Divide into 2 portions and serve. 

Serve with an easy main dish such as Pesto-Grilled Chicken
