Chicken with Italian Tomato over Penne

  • 1 lb plum tomatoes, chopped
  • 2 Tbsp finely chopped onion
  • 2 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 1/4 tsp pepper
  • 1 small clove garlic, minced
  • 1.5 (8oz.) boneless, skinless chicken breast, cut into bite size pieces 
  • 1/8 tsp salt
  • 1 cup uncooked Penne pasta
  • 4 Tbsp Parmesan cheese 
Cook pasta according to package directions. Meanwhile, combine tomatoes, onion, 1.5 Tbsp oil, vinegar, pepper and garlic in a bowl. Brush chicken with remaining oil and heat in non-stick skillet over medium-high heat. Cook until chicken is done. Top pasta with chicken, tomato mixture, and Parmesan cheese evenly
. Makes 2 servings.
