Pork and Pepper Stir Fry

  • 2 tsp olive oil
  • 1/2 lb pork tenderloin, cut into 1-inch pieces 
  • 1/2 cup sliced red onion 
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced 
  • 1 Tbsp low-sodium soy sauce 
  • 1 tsp brown sugar 
  • 1/8 tsp salt
  • 1/8 tsp crushed red pepper 
  • 1 package quick-cooking in-bag brown rice 
Heat 1 tsp oil in nonstick skillet over medium-high heat. Add pork, cook 3 minutes or until browned on all sides. Remove from skillet and keep warm. Heat remaining oil and add peppers and onions to skillet. Cook 2 minutes or until almost tender. Stir in soy sauce, brown sugar, salt and pepper. Add pork and cook until thoroughly heated and pork is done. Meanwhile, heat rice in microwave per package instructions. Serve pork mixture over rice. Makes 2 servings.
