- 1 (8 oz.) boneless, skinless chicken breast, cut into strips
- salt and pepper
- 1/2 tsp olive oil
- 1.5 Tbsp honey
- 1/2 tsp orange rind
- 2 Tbsp orange juice
- 1/2 tsp ground ginger
Season chicken to taste with salt and pepper. Heat oil in non-stick skillet over medium/high heat. Add chicken; cook until slightly browned on the outside. Stir together honey, orange rind, orange juice, and ginger; add to pan with chicken. Stir, scraping the bottom of pan to loosen brown bits. Bring to a simmer and reduce heat; simmer 4-5 minutes or until chicken is done and sauce it thickened. Divide and enjoy! Makes 2 servings.
