Grilled Salmon With Lemon-Basil Vinaigrette on Wilted Arugula Bed

  • 1 Tbsp chopped fresh basil
  • 1/8 tsp grated lemon rind
  • 1 Tbsp fresh lemon juice
  • 3 tsp olive oil
  • 1 clove garlic, minced
  • salt and pepper
  • 1 (6 oz.) salmon fillets
  • 1 cup arugula
Preheat grill to medium-high heat. Whisk together basil, lemon rind and juice, 2 tsp oil and garlic. Sprinkle salmon with salt and pepper. Grill 3 minutes per side or to desired degree of doneness. 

Heat 1 tsp oil in small skillet. Cook arugula approximately 1 minute. 

Divide arugula into 2 servings and place one fillet over each. Drizzle dressing over salmon and serve.

Goes well with Zucchini and Corn Salad
