Spice-Rubbed Flank Steak Over Spring Greens Salad

  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1.5 tsp olive oil
  • 1/2 lb flank steak
Preheat broiler. Combine dry ingredients in small bowl. Brush steak with oil and sprinkle both sides with spices. Press to adhere. Place on broiler pan and broil 4 minutes per side or to desired degree of doneness. Let stand 5 minutes before cutting across the grain into thin slices.

  • 1/2 (10 oz.) package spring mix
  • 1 cup cherry tomatoes, cut in half
  • 1/4 cup thinly sliced red onion
  • 1.5 Tbsp olive oil
  • 1.5 Tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
Whisk together oil, vinegar, garlic, and mustard. Pour over spring mix, tomatoes, and onions in medium bowl. Toss to coat.

Divide salad into 2 servings and top with even portions of flank steak.
