- 2 cups seedless watermelon cubes
- 1 naval orange, peeled and sectioned
- 1/4 cup thinly sliced sweet onion
- 2 tsp olive oil
- 2 tsp white wine vinegar
- 1 cup fresh arugula
- 1/4 cup crumbled goat cheese

Toss together watermelon, orange, onion, oil and vinegar. Divide arugula evenly among 2 salad plates. Top evenly with watermelon mixture and sprinkle with goat cheese. Makes 2 servings.
