- 2 links lean hot Italian sausage
- 1/2 yellow bell pepper, thinly sliced
- 1/3 cup chopped sweet onion
- 1 clove garlic, minced
- 1 medium size ripe tomato, chopped
- 1/4 cup shredded mozzarella cheese
- 2 Tbsp torn fresh basil

Cut sausage links into 1-inch-thick pieces. Heat a large non-stick skillet over medium-high heat. Add sausage; cook 2 minutes. Add bell pepper, onion, and garlic; saute 5 minutes or until bell pepper is tender. Stir in tomatoes, and cook 2 minutes. Serve in 2 portions and sprinkle with cheese and basil.
