Salt and Pepper Grilled Okra

  • wooden skewers
  • 1/2 lb fresh okra
  • 2 tsp olive oil
  • 1/4 tsp salt; 1/4 tsp pepper
Soak wooden skewers in water for 30 minutes. Preheat grill to medium-high heat. Toss together okra, oil, salt, and pepper. Thread okra onto skewers (2 skewers side by side). Grill, covered with grill lid, 3 minutes per side, or until crisp tender. Makes 2 servings.
