Chicken Cacciatore

  • 1 lb boneless, skinless chicken thighs
  • salt and pepper
  • 1.5 cup chopped red onion
  • 1 red bell pepper
  • 2/3 (14 oz.) can fire roasted diced tomatoes
  • 2 cloves garlic, minced
  • 1/2 tsp crushed red pepper
  • 1/3 cup fat-free, reduced sodium chicken broth
Sprinkle chicken with salt and pepper. Place in slow cooker. Top with remaining ingredients. Cook on low 6 hours. Makes 2 servings.
