- 1 lb boneless, skinless chicken thighs
- salt and pepper
- 1.5 cup chopped red onion
- 1 red bell pepper
- 2/3 (14 oz.) can fire roasted diced tomatoes
- 2 cloves garlic, minced
- 1/2 tsp crushed red pepper
- 1/3 cup fat-free, reduced sodium chicken broth
Sprinkle chicken with salt and pepper. Place in slow cooker. Top with remaining ingredients. Cook on low 6 hours. Makes 2 servings.
