- 4 Tbsp olive oil
- 1 lb chicken, cut into bite size pieces
- 1/2 tsp salt
- pepper, to taste
- 14 oz smoked sausage, sliced on the diagonal
- 4 cloves garlic, minced
- 1 qt low-sodium chicken broth
- 2.5 cups heavy cream
- 1 lb penne pasta
- 1.5 Tbsp Cajun seasoning
- 4 oz. Parmesan cheese
- 1 cup Parsley, minced

Use a large covered cooking pot over medium high heat. Season chicken with salt and pepper and brown in oil. Add sausage and continue to cook until browned. Stir in garlic and cook 2 more minutes. Add chicken broth, heavy cream, dry pasta, and Cajun seasoning. Stir together and bring to summer. Reduce heat to low and let cook for 15-20 minutes, or until pasta is tender. Remove pot and stir in cheese. Stir in Parsley and sprinkle with additional Cajun seasoning. Makes 8-10 servings.
