Chicken Pesto Bake

  • 2 chicken breasts
  • salt and pepper
  • 3 Tbsp basil pesto
  • 2 Roma tomatoes
  • 1/2 cup mozzarella cheese 
Heat oven to 400. Place chicken in oven-proof pan coated with cooking spray. Sprinkle chicken with salt and pepper. Spread 1.5 Tbsp basil pesto on top each breast. Slice tomato and cover chicken. Sprinkle cheese on top. Bake for 40 minutes. Makes 2 servings.
