Bacon-Wrapped Pork Tenderloin

  • 1/2 tsp dried thyme
  • 1/4 tsp salt; 1/4 tsp pepper
  • 1/2 lb pork tenderloin
  • 4 slices center-cut bacon
Preheat oven to 425. Rub thyme, salt and pepper evenly over pork. Wrap bacon around pork and place on broiler pan coated with cooking spray. Bake 15 minutes or until meat thermometer reads 140. Increase oven to broil. Broil 3-5 minutes or until bacon is crisp and thermometer reads 145. Let stand 3 minutes before slicing. Makes 2 servings.
