- 1.5 lb chicken breast
- 2 egg whites
- 2 Tbsp water
- 1 sleeve Ritz crackers
- 1/3 cup butter, melted
- 2 Tbsp Chili lime seasoning

Preheat oven to 425. Place Ritz in food processor and pulse until sandy crumbs. Cut chicken into small, 1/2 inch cubes. Bet egg whites with water an toss with chicken pieces. Toss chicken with Ritz until coated all around.
Spray baking sheet with cooking spray a place chicken cubes in single layer. Bake for approximately 6 minutes; turn, and then bake another 6 minutes.
Combine melted butter with chili lime seasoning and toss with cooked chicken. Bake an additional 5 minutes to crisp the chicken.
Makes 4-6 servings.
