- 1.5-2 lb boneless pork tenderloin
- 1 Tbsp salt; 1 Tbsp pepper
- 3 Tbsp canola oil
- 1 large red onion, sliced
- 2 medium apples, sliced
- 1 cup hard cider

Preheat oven to 375. Season pork with salt and pepper all over. Heat 2 Tbsp canola oil in oven-proof skillet, cast iron if you have it, over medium-high heat. Place pork in hot skillet an leave to sear until browned, and then flip and repeat to get all sides. Remove from skillet and set aside.
Add additional oil. Add sliced onions, toss to coat. Add garlic and apples, continue to cook until apples and onions begin to soften. Pour in cider and bring to simmer.
Place pork back in skillet, on top of onions and apples. Spoon liquid over pork and transfer to oven. Bake 15-20 min, or until cooked through. Remove from skillet and allow to rest for 10 minutes before slicing. Makes 4 servings.
