- 2 tsp vegetable oil
- 1 large onion, coarsely chopped
- 1 small green bell pepper, coarsely chopped
- 1 small red bell pepper, coarsely chopped
- 1 lb cooked red potatoes, cubed
- 1 smoked turkey drumstick (1 lb), skinned, boned, and cubed
- 1 egg white, lightly beaten
- 2 tbsp chopped parsley
- 1/2 tsp dried thyme
- 1/8 tsp salt
- 3 tbsp fat-free milk
Mix all ingredients and cook over vegetable oil in a pan on medium-high heat. Makes 4 servings.
