Polenta with Turkey Meat Sauce

  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1/2 lb lean ground turkey 
  • 1/4 tsp dried oregano
  • 1/8 tsp salt
  • 1/8 tsp cayenne pepper
  • 1.5 cups low sodium marinara sauce 
  • 1 (18 oz.) tube precooked polenta, cut into 9 slices
  • 3 Tbsp chopped fresh basil
  • 3 Tbsp grated Parmesan cheese 
Saute onion and garlic in hot oil in medium saucepan over medium-high heat 2 minutes. Add turkey, oregano, salt and cayenne pepper; cook 5 minutes or until turkey is browned, stirring to crumble. Stir in marinara sauce; bring to a boil, and let simmer. Meanwhile, heat a large nonstick pan coated with cooking spray over medium-high heat. Add polenta adn cook 4-5 minutes per side or until crisp and slightly browned. Divide polenta and sauce, top with basil and cheese. Makes 3 servings.
