Lighter Steak Salad

  • 1/2 lb top sirloin steak, trimmed
  • 1/2 small sweet onion, chopped
  • salt and pepper
  • 1/2 (12 oz) jar roasted red peppers, drained and sliced
  • 5 oz package spring mix lettuce
  • 1 tbsp balsamic vinegar
  • 1.5 tsp honey
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1.5 tsp olive oil
Preheat stove top to medium-high heat. Sprinkle steak with salt and pepper to taste. Place steak and onion on skillet, coated with cooking spray. Sear for 10-12 minutes, turning occasionally, or until desired doneness and onion is tender. Let steak stand 10 minutes; slice thinly across the grain. Combine steak, onion, roasted red pepper, and sprink mix in serving bowl. Whisk together vinegar, oil, honey, mustard, garlic, and about 1/4 tsp salt and pepper. Pour dressing over salad and toss well. Makes 2 servings.

Goes great with Grilled Blue Cheese Crostini.
